Peach Cobbler
Pair with a dollop of homemade vanilla ice cream ~~~ dream combination!
Ingredients:
Crust:

2 Cups of Flour

3/4 TSP of Salt

3/4 Cups of (refrigerated) Shortening

4-6 TBSP of ice water
Cobbler:

8-10 Medium-Large Peaches (sliced)

2 Cups of Sugar
-
2 TBSP of Lemon Juice

1 Cup of Cinnamon Sugar
-
1 Stick of Real butter (melted)

1/2 Stick of Real butter
Directions:
This recipe is always a huge hit at our college tradition of friendsgiving!

In a large bowl, combine peeled peaches, sugar, and lemon juice. Allow sugar to dissolve.

For Crust, combine loosely compacted flour and salt into bowl. Then cut shortening into flour until dough is in pea sized pieces. Sprinkle 4-6 TBSP of ice water into mixture. Mix together carefully.

Gently place dough mixture into ball covered with saran wrap and refrigerate for 2 hours.

When the two hours is up, roll out dough. Cut 4 length wise strips of dough for pan and 7 for the width.

Place a thin layer of excess dough in the bottom of pan. Cut 1/2 stick of butter and sprinkle throughout bottom of the pan.

Add peach mixture to pan.

Apply lattice work, and brush all pastries with melted butter.

Sprinkle with Cinnamon Sugar and cook at 350 for 50-60 minutes.
