  • In a large bowl, combine peeled peaches, sugar, and lemon juice.  Allow sugar to dissolve.

  • For Crust, combine loosely compacted flour and salt into bowl.  Then cut shortening into flour until dough is in pea sized pieces.  Sprinkle 4-6 TBSP of ice water into mixture.  Mix together carefully.

  • Gently place dough mixture into ball covered with saran wrap and refrigerate for 2 hours.

  • When the two hours is up, roll out dough.  Cut 4 length wise strips of dough for pan and 7 for the width.

  • Place a thin layer of excess dough in the bottom of pan. Cut 1/2 stick of butter and sprinkle throughout bottom of the pan.

  • Add peach mixture to pan.

  • Apply lattice work, and brush all pastries with melted butter.

  • Sprinkle with Cinnamon Sugar and cook at 350 for 50-60 minutes.
