Instant Pot Mexican Rice

Perfectly paired with your Taco Tuesday

Ingredients:

  • 3 Cups of Rice

  • 3 Cups of Chicken Broth

  • 1 Cup of Water

  • 1 Can of Rotel

  • 1 Can of Fiesta (Southwest) Corn 

  • Half Purple Onion (Chopped)

  • 1 Cup of Chopped Green Onions

  • Olive Oil

  • Fresh Cilantro

  • + Your Favorite Seasonings

Directions:

  • Add rice, water, and chicken broth to bowl and allow to soak for 15 minutes.

  • In your Instant Pot on the sauté setting, add your onion, green onions and 3 tablespoons of olive oil.  Sauté for 6-7 minutes.

  • Add soaked rice, Rotel, corn (drained), and seasonings to onion mixture in Instant Pot.  Allow to cook on manual setting for 8 minutes.  Depressurize for approximately 5 minutes.

  • Garnish with fresh cilantro.
