Creamy Lemon Pie

Tastes like Summertime!

Ingredients:

Pie Mixture:
  • 3 Large Egg Yolks

  • 1 (14 oz) Can of Eagle Brand Sweetened Condensed Milk

  • 1/2 Cup of Lemon Juice

  • Lemon to Garnish

Crust:
  • 1 Box of Vanilla Wafers

  • 1 Stick of Margarine, Melted

  • Small Container of Cool Whip

Directions:

  • Crush 3/4  package of vanilla wafers - mix with 1 stick of melted margarine.  Press into pie plate and bake crust at 375 for no longer than 10 minutes.  It will begin to puff in the middle.  Remove from oven and allow to cool.

  • Heat oven to 325 .  Beat egg yolks, add can of sweetened condensed milk, and lemon juice until well mixed.  

  • Pour mixture into crust

  • Bake pie for 30-35 minutes, or until set.  Allow pie to cool for 1 hour, then place in refrigerator to chill for approximately 3 hours.

  • Top with cool whip and it is ready to serve.
