Instant Pot Pork Loin

A tender pork loin with mushrooms, potatoes, and carrots... Another Southern staple dish.

Ingredients:

  • 4 Russet Potatoes (peeled & chopped)

  • 6 Chopped Carrots

  • ~2 Pounds of Pork Loin

  • 1 Container of Fresh Sliced Mushrooms

  • 6 TBSP of Olive Oil

  • 2 TBSP of Soy Sauce

  • 3 Cups of Chicken Broth 

  • 2 TBSP of Butter

  • + Your Favorite Seasonings

Directions:

  • Using Sauté setting on Instant Pot, add the olive oil and generously seasoned pork loin.  Brown both sides of the loin for approximately 7 minutes on each side.

  • After the loin is browned, remove it from the Instant Pot and add mushrooms, carrots, butter and seasonings.  Sauté for approximately 10 minutes.

  • Thinly slice the pork loin, then add the loin,  potatoes, chicken broth, soy sauce, and other seasonings to the mushroom and carrot mixture in the pot.

  • Layer the potato chunks on top for best texture and taste.

  • Place the Instant Pot on the manual setting and cook on high for 5 minutes, then allow to naturally release for 10 minutes.

  • After the steam release, the pork loin is ready to serve!
