Instant Pot Pork Loin
A tender pork loin with mushrooms, potatoes, and carrots... Another Southern staple dish.
Ingredients:

4 Russet Potatoes (peeled & chopped)

6 Chopped Carrots

~2 Pounds of Pork Loin
-
1 Container of Fresh Sliced Mushrooms

6 TBSP of Olive Oil
-
2 TBSP of Soy Sauce
-
3 Cups of Chicken Broth
-
2 TBSP of Butter
-
+ Your Favorite Seasonings
Directions:

Using Sauté setting on Instant Pot, add the olive oil and generously seasoned pork loin. Brown both sides of the loin for approximately 7 minutes on each side.

After the loin is browned, remove it from the Instant Pot and add mushrooms, carrots, butter and seasonings. Sauté for approximately 10 minutes.

Thinly slice the pork loin, then add the loin, potatoes, chicken broth, soy sauce, and other seasonings to the mushroom and carrot mixture in the pot.

Layer the potato chunks on top for best texture and taste.

Place the Instant Pot on the manual setting and cook on high for 5 minutes, then allow to naturally release for 10 minutes.

After the steam release, the pork loin is ready to serve!
