Instant Pot Chicken Alfredo

A modern twist to a traditional dish!

Ingredients:

  • 2 TBSP of Canola Oil

  • 1.5 Pounds of Chicken Breasts

  • 4.5 Cups of Chicken Broth

  • 5 Cups of Bowtie Pasta

  • 8 Oz of Cream Cheese

  • 1 Cup of Shredded Mozzarella Cheese

  • 1/4 Cup of Shredded Parmesan Cheese

  • 1 TBSP of Corn Starch

  • + Your Favorite Seasonings

Directions:

  • Place Instant Pot on sauté setting  Add canola oil.

  • Add seasoned chicken breasts, and brown on both sides. This should take 5-6 minutes total.

  • Add Chicken broth, and scrape the bottom of the pot for any stuck on bits.  Turn the Instant Pot off.

  • Add the pasta to the Instant Pot (do not stir) and press down with a spatula into the liquid.  The liquid should barely cover the pasta.

  • Put the lid on the Instant Pot and place the valve on sealing.  Place the Pot on the manual or pressure cooking setting for 3 minutes.

  • When the cook time is over, do a quick release and remove the lid.

  • Turn the Instant Pot to saute and begin adding cream cheese, mozzarella, and parmesan cheese.

  • Add corn starch and stir pasta.  Cook and stir until thickened and seasoned to taste

  • Enjoy!
