Chicken Tetrazzini

A full meal cooked in one pot, no messy kitchen!

Ingredients:

  • 1 Onion, chopped

  • 2 Cups of Fresh Sliced Mushrooms

  • Olive Oil

  • Salt and Pepper + your favorite seasonings

  • 3 Pounds of Boneless Skinless Chicken Breasts (thawed and diced)

  • 3 Cups of Chicken Broth

  • 2 (10 oz) Cans of Cream of Mushroom Soup

  • 1 (4 oz) Jar of Chopped Pimentos (drained)

  • 1 Box of Penne Pasta (16 oz box)

  • 1/2 Cup of Chopped Green Onions

  • 2 Cups of Shredded Cheddar Cheese

  • 1/2 Cup of Grated Parmesan Cheese

I served this dish with a simple side salad. Delish!

Directions:

  • In your Instant Pot on the sauté setting, add your chopped onion, green onions, and mushrooms with approximately 3 tablespoons of olive oil.  Sauté about 6-7 minutes.  Next, add salt, pepper, and other seasonings along with your chicken breasts, chicken broth, mushroom soup, and pimentos. Place the lid on your Instant Pot and set it to the manual setting for 15 minutes.

  • When 15 minutes is up, allow your Instant Pot to depressurize.  Remove the lid and change the setting back to sauté.  Using two forks, shred the chicken.  After chicken is shredded, add in your pasta and both cheeses.  Place pot on manual setting (with lid) for an additional 10 minutes or until pasta is tender. 

  • This recipe serves 4-6.
