Southwest Breakfast Casserole

Our favorite Saturday morning staple.

Ingredients:

  • 1 dozen eggs

  • 4 Cups of Milk

  • 10 oz. Can of Mushroom Soup

  • 4 oz. Can of Green Chilies

  • 1 bunch of Green Onions (chopped)

  • 1 TSP of Ground Black Pepper

  • 10 oz. Seasoned Croutons

  • 1 Pound of sausage, cooked and crumbled

  • 2 Cups of Shredded Cheese

Directions:

  • In bowl, beat the eggs.  Whisk in the milk, soup, green chilies, green onions and black pepper.  

  • Arrange the croutons in the bottom of a greased 9x13 baking pan.  Layer the sausage over top of the croutons, and pour liquid on top.

  • Sprinkle the cheese on top.  Cover with foil and place in the refrigerator overnight. 

  • Bake, uncovered, at 350 for 60-75 minutes.
